So I've been a chef since I was 18, now I'm 34 and I have seen a lots of things and been around the world cooking in some of the best restaurants in the world!
When I was 20 I moved to Madrid and got shouted at a lot until I quickly learned how to speak Spanish! I stayed in Spain for nearly 2 years and ended up working for a chef called Sergio Arola. This was at the time when Spanish food was becoming some of the best in the world and I just so happened to of found myself in the kitchen of a very forward thinking chef.
I saw "molecular gastronomy" for the first time and had my mind blown!
When I returned to England I decided to ask the best restaurant in the world (the top 50 list published each year) for a job, which happened to be The Fat Duck in Bray. I emailed my cv and to my amazement I was asked to come and do a month stage (free work in chef terms). My time at the fat duck opened my mind to food, after the month was over I moved to maidenhead and worked for Heston Blumenthal for the next 2 years. In one way or another through this time being on my cv and through great people I met while I was there it helped me get most of the next positions in my career so it turned out to be the best decision I ever made.
So that's my brief history and this blog is the continuation of my journey and a chance for me to give you reading an insite into a chefs life!
